Pork loin in plum sauce and Malbec ANTARA red wine

Sounds impressive right? and believe me, the taste is even better.

For this recipe you will need the following ingredients:

1 pork loin of 1kg

1 cup pitted plums

1 medium onion

2 garlic cloves

2 cups of chicken broth

1 cup of Malbec red wine

1 tablespoon brown sugar

2 tablespoons of olive oil

Salt and ground black pepper

Let's start the cooking!

1. Prepare the meat

The first thing you should do is season the pork loin. Heat a large skillet with olive oil and brown the meat over medium-high heat on both sides until a golden crust forms on the surface. Remove the meat from the pan and place it on a plate.

2. Prepare the sauce

Now, in the same pan where the meat was browned, add the chopped onion and garlic. Cook over medium heat until tender and golden, then add the plums and brown sugar. Cook for another 2-3 minutes until the plums soften and a thick sauce forms.

3. Add the wine

Add the Malbec red wine and let it cook for a few minutes over medium-high heat so that the alcohol evaporates. Then, add the chicken broth and let the sauce simmer for about 10 more minutes.

4. Finish the meat

Meanwhile, preheat the oven to 180°C. Place the pork loin on a baking tray and cook for about 15-20 minutes or until the meat is cooked to the point you like. Once cooked, remove from the oven and let it rest for a few minutes before cutting.

5. Plate up

To serve, place a portion of pork loin on a plate and top with the plum sauce and Malbec wine. You can accompany it with a garnish of steamed vegetables or with some roasted potatoes.
