Beef stew with potatoes and vegetables
We will show you how to prepare a delicious and innovative traditional dish of European cuisine, full of flavor and textures that pairs perfectly with a Red Blend ANTARA, Bonarda, Syrah and Tempranillo.
For this recipe you will need the following ingredients:
1 kg of beef (preferably cut into small cubes)
1 cup of red wine blend of Bonarda, Syrah and Tempranillo
4 large potatoes
2 medium carrots
1 large onion
3 garlic cloves
2 cups of meat broth
2 tablespoons of olive oil
1 tablespoon of flour
Salt and ground black pepper
Let's start with the preparation!
1. Prepare the ingredients
Peel and cut the potatoes and carrots into small cubes, julienne the onion and finely chop the garlic.
2. Sealing the meat
In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and ground black pepper. Cook until the meat is browned and forms a golden crust on the surface. Remove the meat from the pot and place it on a plate.
3. Vegetable stir-fry
In the same pot where the meat was browned, add the chopped onion and garlic and cook until golden. Add the carrots and potatoes, and cook for a few minutes until the vegetables are slightly golden.
4. Add the wine
Add the tablespoon of flour and stir until the vegetables are well coated. Pour in the cup of red wine blend of Bonarda, Syrah and Tempranillo and let it cook for a few minutes over medium-high heat so that the alcohol evaporates.
5. Add the broth and meat
Add the beef broth to the pot and return the browned meat. Stir well, making sure everything is covered in liquid. Then, lower the heat to a simmer and let simmer for about 1 1/2 hours or until the meat is tender and the vegetables are soft.
6. Serve
To serve, place a portion of the stew in a deep dish and add a tablespoon of chopped fresh parsley on top for a touch of colour.
